That swirly "Damascus" pattern on a Japanese knife isn't what cuts.
Oct 22On a layered (clad) knife, a hard steel core makes the edge, and the outer layers carry the pattern. Tokushu Knife puts it plainly for one of its knives: "SG2 powdered stainless steel forms the cutting core, supported by stainless Damascus cladding."1 So when you compare patterned knives, compare the core steel. Hinoura Hamono Kobo, the forge in our post, is a family workshop in Sanjo, Niigata, where third-generation smith Tsukasa Hinoura entered the trade in 1978.2 None of its knives were in stock at the four shops we track at our Oct 19 check.
